3 medium courgettes

150 g fresh goat cheese

1 goat stick

3 eggs

25 cl milk

Pepper

Salt

Olive oil

Butter and flour to coat the mould

Sugar to taste
For the accompanying grout:

5 medium tomatoes

Basil

1 clove of garlic

Pepper

Salt

Preparation: 30 min
Cooking time: 45 min
Step 1
Sauté the zucchini in olive oil. Season with salt and pepper.
Step 2
Drain the cooked courgettes and put them in the food processor.
Step 3
Purée and mix.
Step 4
Preheat the oven to 200°C (thermostat 6-7).
Step 5
Add the eggs, fresh goat cheese, milk, a pinch of salt and a pinch of pepper. Mix everything together to obtain a homogeneous mixture.
Step 6
If necessary, add a little sugar to reduce the bitterness of the courgettes.
Step 7
Butter and flour the pan, then pour the mixture into the pan and put it in the oven for about 20 minutes.
Step 8
Take out the mould and place slices of goat's cheese on the preparation that is starting to rise.
Step 9
Bake for 25 minutes until the flan is golden brown.
Step 10
Wait for complete cooling and remove from the mould.
Step 11
Prepare the coulis by mixing all the ingredients.
Step 12
Serve slices of flan topped with tomato sauce.

Can be served with meat, especially on a barbecue.
