6 Zucchini flowers

1 medium courgette

1 slice of bread without crust

15 cl water

1 onion c├ębette

1/2 clove fresh garlic

4 tablespoons of olive oil

1 egg

3 sprigs of parsley

3 sprigs of chives

2 sprigs of basil

3 sprigs fresh coriander

Step 1
Wash and remove the pistil from the courgette flowers and separate them from the flowers.
Step 2
Coarsely chop the courgette without peeling it but removing the inside with the seeds.
Step 3
Soak the slice of bread in water to soften it.
Step 4
Chop the onion and half clove of garlic.
Step 5
Chop the chives and basil, chop the parsley and coriander.
Step 6
Set aside a few raw zucchini in a bowl to give more crunch to the stuffing.
Step 7
Put the oil in a frying pan and fry, without browning, the onion, garlic and zucchini until the zucchini is melted.
Step 8
Put the device in the bowl. Wait until it cools down.
Step 9
Add the breadcrumbs, egg and herbs. Mix well.
Step 10
Add enough salt and pepper.
Step 11
Heat a steam appliance. If not, take a saucepan with a flat strainer and a lid.

With a fairly large round piping bag, but not too large, stuff the flowers until they are well filled.

It can also be done with a small spoon, but it is longer.

Place the flowers in the steamer and cook for 10 minutes.

Gently remove them and place them on a warm serving dish.

This accompaniment goes very well with a fried veal cutlet and a new potato in a field dress, also steamed.
