Zucchini lasagna with arugula

Zucchini lasagna with arugula

Number of people

3 straight courgettes

75 g arugula

1 tomato

200 g feta cheese

100 g grated Emmentaler

15 basil leaves

1/2 lemon

Olive oil

Preparation: 30 min
Cooking time: 15 min
Step 1
Cut the courgettes lengthwise into 1/2 cm slices.
Step 2
Mark on an oiled hot grill. Add salt and set aside.
Step 3
Peel and seed the tomato. Cut into small cubes. Book.
Step 4
Cut the feta cheese into small cubes.
Step 5
Chop the basil.
Step 6
Preheat the oven to 180°C (thermostat 6).
Step 7
On a non-stick plate place a layer of courgettes, cover with half the arugula, diced tomatoes, feta cheese and basil.
Step 8
Drizzle with olive oil and a few drops of lemon juice. Season with salt and pepper.
Step 9
Repeat the operation, finishing with a layer of courgettes. Cover with the Emmental cheese.
Step 10
Bake for 10 minutes at half height.
Step 11
Place under the oven grill to brown the cheese.
