Number of people

4 tomatoes to stuff

150 g cooked beef meat (roast, stew...)

150 g white ham

2 shallots

1 small handful of parsley

2 sprigs of tarragon

6 basil leaves

1 egg

2 slices of sandwich bread

10 cl of milk

Olive oil



Preparation: 15 min
Cooking time: 35 min
Step 1
Cut the tops off the tomatoes, hollow out the tomatoes and salt them. Turn them over and let them drain for an hour.
Step 2
Soak the bread in the milk.
Step 3
Chop the meat, ham, shallots, parsley, tarragon and basil. Squeeze the bread to drain and add it to this preparation, as well as the egg and 1 tablespoon of oil. Season with salt and pepper.
Step 4
Garnish the tomatoes with the stuffing by pressing well.
Step 5
Cook them in a covered skillet with oil stock for 30 to 40 minutes, or in the oven at 180°C (thermostat 6) for about 45 minutes.
