500 g beef fillet

2 medium shallots

8 white onions, spring onion type

10 cherry tomatoes

2 scoops of mozzarella

10 basil leaves

1 drizzle of olive oil

Balsamic vinegar cream

Pepper

Salt

2 egg yolks



Preparation

Preparation: 5 min
Step 1
In a blender, mix the shallots and onions, tomatoes, two egg yolks, two mozzarella balls and basil leaves into small chips.
Step 2
Once mixed, add them to the beef, mix.
Step 3
Add the balsamic cream and a drizzle of olive oil.
Step 4
Season with pepper, salt, mix and it's ready.
Author's note
We can add some parmesan shavings.
