2 pieces of bluefin tuna

4 kiwis

Lemon Lemon

Crystal sugar

20 cl red wine

Pepper

Cooking time: 15 min
Step 1
Heat 2 tablespoons of olive oil in a frying pan.
Step 2
Give a few strokes of knife in the tuna steaks, salt, pepper, put in hot oil over medium heat.
Step 3
After 5 minutes turn the tuna over, cut the peeled kiwi into small squares and sauté in oil next to the tuna.
Step 4
Add the spices to the kiwi, sprinkle with two or three teaspoons of crystal sugar.
Step 5
Let the tuna cook well, the kiwis start to form a kind of fruit puree, add the glass of wine on top.
Step 6
Squeeze a little lemon juice over the tuna, and with a large spoon recover the juice from the kiwis to water the tuna.
Step 7
When the tuna is well cooked, remove from the heat.
Step 8
Serve with the kiwi purée placed around the tuna on a flat plate with a few basil leaves.

Bluefin tuna has the particularity of having a flavour and appearance that is similar to beef. Without stopping, it has the tenderness of a tournedos.
