500 g of medium semolina

50 cl water

200 g lemon juice

3 tablespoons of olive oil

5 peeled tomatoes

1 onion

1 teaspoon chopped basil or oregano

1 tablespoon chopped mint

Pepper

Salt

Preparation: 35 min
Cooking time: 15 min
Step 1
In a large bowl put the semolina, add the water, lemon juice and half of the mint. Let stand for 35 minutes.
Step 2
Meanwhile, cut the tomatoes in a saucepan, add the chopped onion, olive oil and remaining herbs.
Step 3
Reduce over low to medium heat for about 15 minutes until no more tomato pieces are left. Season with salt and pepper to taste.
Step 4
Add the tomato sauce to the semolina and mix well.
