For the pistou:

5 cloves of garlic

150 g basil

100 g Parmesan cheese

Olive oil

Pepper

Salt
For the soup:

1 onion

1 leek

2 ripe tomatoes

200 g fresh green beans

4 potatoes

200 g zucchini

1 cube of vegetable stock

Olive oil

Pepper

Salt

Preparation: 30 min
Cooking time: 50 min
Step 1
For the pistou: put in the blender basil, garlic, parmesan cheese, salt and pepper
Step 2
Mix and add the olive oil until the pistou becomes thick enough.
Step 3
For the soup: melt the onion and leek in olive oil.
Step 4
Combine the previously blanched tomatoes, potatoes and zucchini cut into medium pieces, cut green beans, salt and pepper.
Step 5
Cover with 50 cl of water + the stock cube and cook 3/4 of an hour at low heat and covered, adding water if necessary.
Step 6
Serve the soup and add the appropriate pistou to taste. Mix with the soup.
