100 g Emmental (or Gruyère)

2 tomatoes

1 potato

1 sprig of lemon basil

1 drizzle of oil (olive or sunflower)

Step 1
Peel the potato and cut it into thin slices with a mandolin (2 mm) or, if not possible, with a knife.
Step 2
Fry them in a frying pan in oil for 5 minutes.
Step 3
Meanwhile, cut the tomatoes and cheese into small cubes.'
Step 4
Mix them with the 4 whole eggs and a pinch of salt. Shell the shrimp.
Step 5
When the potato slices start to brown, pour in the egg-tomato-cheese mixture, lifting the potatoes slightly from the pan to slide the eggs underneath.
Step 6
Divide the shrimp among the shrimp.
Step 7
Leave to cook for 5 minutes.
Step 8
When cooked, add pepper and basil leaves cut into small pieces.
Step 9

This recipe, entitled Fouzitou ("crazy everything"), is the surprising result of an improvisation on a weekday evening. The result won over the whole family.
