1 kg of octopus

3 cloves of garlic

1 carrot

8 cl of vinegar

300 g zucchini

1 green pepper

1 red pepper

1 teaspoon of sugar

12 pitted green olives

Olive oil

Basil

Oregano

Parsley

Pepper

Salt

Cooking time: 1 h
Step 1
Cook the octopus: boil water in a saucepan with a tablespoon of wine vinegar. Add the octopus, cook for 1 hour.
Step 2
Cook the courgettes lightly and grate them finely.
Step 3
Mix the rest of the vinegar, basil, oregano, parsley, garlic, sugar, salt and pepper in a large bowl at the same time as you drizzle with olive oil.
Step 4
Add the cooked octopus cut into pieces, grated zucchini, carrot cut into strips, diced peppers and olives.
Step 5
Mix well, cover the bowl and let stand in the refrigerator for at least 3 hours before serving.
