400 g macaroni

2 courgettes

1 eggplant

1 red pepper

10 dried tomatoes

100 g Greek olives

70 g very finely grated parmesan cheese

20 cl olive oil (depending on taste)

3 tablespoons balsamic vinegar

1 beautiful bouquet of basil

Preparation: 45 min
Cooking time: 10 min
Step 1
Once washed and wiped, cut the vegetables into pieces (about the size of a walnut) and fry them separately in part of the olive oil. Leave them al-dente, then set them aside (a pipe: put coarse sea salt in the oil, it's better).
Step 2
Meanwhile, cook the macaroni in well salted water for the time indicated on the package. Once cooked, rinse them well! (so they will not stick).
Step 3
Cut the dried tomatoes into small pieces. If you think your guests are really dizzy, pitted the olives (I leave them whole because I know how to choose my friends; -)).
Step 4
Mix it all together. Add the remaining olive oil, balsamic vinegar, parmesan cheese and chopped basil. Don't hesitate to stir everything well, putting your hands on it is even better (yes yes, I'm serious)!
Step 5
Adjust the seasoning.

To be at the top, this recipe needs to be prepared the day before, unless you want to enjoy it hot, which is quite possible. It is a delight, but not recommended for people on a diet ;-)))
