Leek and smoked salmon tart with Provençal version

1 shortcrust pastry

200 g smoked salmon

2 leeks

1 onion

20 cl of liquid cream

2 eggs

Pepper

Salt

Thyme

Basil

1 tablespoon olive oil

Grated cheese

Preparation: 20 min
Cooking time: 25 min
Step 1
Preheat the oven to 180°C (thermostat 6).
Step 2
Heat the olive oil and sprinkle with thyme and basil. Sauté the onion and leeks cut into strips in this preparation and cook for 15 minutes.
Step 3
Add a glass of water during cooking, salt and pepper.
Step 4
Cook the shortcrust pastry for 15 minutes.
Step 5
Mix the cream, eggs and salmon cut into pieces and add them to the onion/leek mixture.
Step 6
Pour the mixture over the dough; add the grated cheese to the mixture to obtain a gratin effect. Cook for 25 minutes.
