2 fresh goat cheeses

300 g cooked red beetroot


Ground pepper

Basil in stalk

Olive oil

Preparation: 15 min

Step 1
In a bowl, mix the goat cheeses and two spoons of olive oil to obtain a smooth cream. Season with salt and pepper.
Step 2
Cut the beets into strips.
Step 3
Line 4 ramekins with a transparent foil and let them hang over the top.
Step 4
Alternate a layer of goat cheese with a layer of beet. Finish with the beet.
Step 5
Close the foil and press it so that the preparation is compact. Put in the refrigerator for at least 2 hours.
Step 6
For the topping, mix the basil and olive oil.
Step 7
Turn out the ramekins and coat with the basil sauce and decorate with fresh basil leaves.

For the success of this dish, the transparent film is essential for a good demoulding of the ramekins. [Editor's note: the presentation as in the photo was not planned at the base, but gives a real "Warholian" plus]
