Marinated scallops, fresh goat cheese sauce

Marinated scallops, fresh goat cheese sauce

Number of people

20 scallops (without the scallops) but with coral

1 can of beer

1 fresh goat cheese

1 small jar of fresh cream

5 basil leaves



Olive oil + 1 knob of butter

4 slices of smoked salmon + 4 fillets of whiting
For support:

Lamb's lettuce

Cherry tomato

Preparation: 45 min
Cooking time: 10 min
Step 1
Marinate the scallops in the beer for 1/2 hour, then drain them on absorbent paper.
Step 2
Mix in a bowl the fresh cream, fresh goat cheese, chopped basil, salt and pepper and set aside.
Step 3
Arrange the plates, placing the lamb's lettuce and tomatoes cut into small cubes.
Step 4
Serve with a vinaigrette (if possible with balsamic vinegar and olive oil).
Step 5
Brown the scallops in butter, place them on the plates and cover lightly with goat cheese sauce.
Step 6
Serve immediately!

Variation: Brown the whiting fillets in olive oil and arrange them on the plates with a slice of salmon and scallops.
Author's note
Be careful not to let the scallops marinate for too long, remove them when they start to blanch. Put the rest of the sauce in a sauce boat and serve at the table. If there are any left, it's delicious on tomatoes!
