2 panga fillets

2 leeks

2 tablespoons of fresh cream

1 tablespoon of mustard (old-fashioned is better)

2 tablespoons breadcrumbs

1 tablespoon dehydrated or fresh basil


Olive oil



Preparation: 10 min
Cooking time: 30 min
Step 1
Preheat the oven to 200°C (thermostat 6-7).
Step 2
Wash the leeks and cut them into slices.
Step 3
In a saucepan, heat olive oil over high heat and add the leeks. Cook them over high heat for 2-3 minutes.
Step 4
Lower the heat, cover and melt the leeks for 20 minutes.
Step 5
While cooking, add the lemon juice.
Step 6
Meanwhile, spread the panga fillets with mustard on one side and place them in an oiled ovenproof dish.
Step 7
In a bowl, mix the breadcrumbs, 1 tablespoon of oil and basil.
Step 8
Cover the panga fillets with this mixture and bake the dish for 20 minutes.
Step 9
When the leeks are cooked, add the crème fraîche, a little turmeric and season to taste.
Step 10
When the fish is cooked, set up the plates: place the fish on the leek fondue.

For the gourmands: this dish can be served with a muslin in olive oil.
