Onion tatin, tomato sauce

Number of servings

6 onions (yellow or red)

1 puff pastry dough

1 tablespoon olive oil

1 tablespoon balsamic vinegar

20 g butter

2 tablespoons of sugar
For the tomato sauce:

3 tomatoes

1 teaspoon basil (or thyme, rosemary)

3 cloves of garlic

1 pinch of salt

1 pinch of pepper

Preheat the oven to 180°C (thermostat 6).

Take the tomatoes, herbs and garlic, mix them all.

Sweat the onions with butter and oil.

Once the onions start to brown, add the sugar and caramelize them. Then deglaze them with balsamic.
