Palm tree with basil

Number of palm trees

250 g puff pastry

4 cloves of garlic

20 basil leaves

4 tablespoons of oil

Flower of Guérande salt

Flour to spread the dough

Olive oil for brushing

Preparation: 30 min
Cooking time: 15 min
Step 1
Peel the garlic cloves, mix them with basil and olive oil until you obtain a thick purée.
Step 2
Roll out the puff pastry (on a floured work surface) into a rectangle of about 40 by 30 cm.
Step 3
Spread the basil puree on the surface of the dough, fold the two long sides towards the centre. Brush the paste with olive oil, fold the sides back towards the centre, oil again, fold again towards the centre in order to obtain a kind of roller. Place it in the freezer for 30 minutes.
Step 4
Preheat the oven to thermostat 6 (180°C).
Step 5
Take the roll of dough out of the freezer, cut it into 1 cm thick slices.
Step 6
Place them on an oiled baking sheet. Sprinkle with a few grains of fleur de sel and cook for 15 minutes.
Step 7
Serve warm or cold as an aperitif.
Author's note
Tip: Lightly roll the rolling pin over the palm trees placed on the baking sheet, you will get crisper cakes.
