1 kg of beef to be braised (the same as for Burgundy)

500 g beef tail (if you like)

1 onion pricked with 2 cloves

2 pinches of coriander

1 star of star anise

3 tablespoons nuoc mam (taste to adjust, it must be a little salty otherwise it is bland when you add the noodles)

Salt

500 g rice noodles
To serve:

Thai basil or mint

Coriander

Soybean sprouts

Lemon Lemon

Pepper

Pepper

Cooking time: 2 h

For the beef broth:

Put the meat, onion, coriander flower, star anise, nuoc mam in a large pot, cover with water, bring to a boil, skim.

Simmer for about 2 hours (or shorter in pressure cooker) the meat should be super tender.

Noodles:

Cook the rice noodles as indicated on the package.

Soak 1 hour in lukewarm water before cooking if you are patient.

Cut the beef into thin slices

Add the beef tail meat

Place on the noodles

Pour in the very hot broth

Put the herbs in.

Author's note
Can also be done with chicken, I recommend thighs that remain soft, the whites would be too dry. Coriander flower in Asian shops (Hoa Hat tieu, if it translates to pepper flower)
