Fresh fish

Cooking time: 25 min
Step 1
Clean the fish, cut it into portions and soak it in a marinade with lemon, salt, a clove of crushed garlic and a small pepper.
Step 2
Let it marinate for 20 minutes.
Step 3
Heat 1 to 2 tablespoons of oil. Brown some pieces of bacon, 250 g of seeded tomatoes, 125 g of onion cut into rings, bay leaf, let it brown for 5 minutes.
Step 4
When the composition is cooked, add a bouquet garni (thyme, parsley, chives), a sprig of basil, 2 g crushed garlic, a glass of hot water poured little by little. Boil over low heat.
Step 5
When it is boiling, gently place the pieces of fish, starting with the head and a little marinade.
Step 6
Cover the pan, cook over high heat for quick cooking to prevent the fish from disintegrating in the pan.
Step 7
Check another 5 minutes of cooking with the teeth of a fork.
Step 8
Before removing from the heat, add lemon, crushed garlic and oil. Beat this mixture to obtain the consistency of a mayonnaise to thicken the chili pepper sauce.
Step 9
Persist and add a tablespoon of butter at the last minute.
Step 10
Serve with white rice, preferably flavoured.

It is a typical Creole dish that we taste during holiday meals! Tradition has it that if you eat chilli peppers, you never leave our beautiful country of French Guiana.
