Raw salmon with basil

Raw salmon with basil

Number of people

1 thick salmon steak (500 g)

1 kg of coarse salt

1 teaspoon ground grey pepper

1 teaspoon of ground berry

1 teaspoon of marjoram

4 bay leaves

1 spoonful of garlic powder
For the marinade:

4 tablespoons of olive oil

1 lemon

1 clove of garlic

1 teaspoon green pepper

Prepare the brine by mixing the coarse salt with the spices, marjoram, garlic powder and previously crushed bay leaves.
Step 4
Peel the net, remove the edges, wash and dry it thoroughly with absorbent paper. Wrap it tightly in gauze.
Step 5
Place a bed of coarse scented salt at the bottom of the bowl, then the swaddling salmon and cover with the rest of the coarse salt.

Put in the fridge for 24 hours.

Prepare the marinade with olive oil and lemon, and add the garlic clove pressed with garlic, crushed green pepper berries with a fork and chopped basil with a knife (not pureed!).
Step 9
Remove the salmon from the coarse salt and carefully wipe the gauze before removing the swaddling so as not to cause any grains of salt.
Step 10
With a good knife cut thin slices, place them in a dish and drizzle them with the marinade. Put back in the cold.
Step 11
After half an hour, turn them over so that the other side soaks up the basil marinade and let them rest in the cold for another half an hour.
