2 monkfish tails (ask the fisherman to lift the skin that hardens during cooking)

2 cloves of garlic

1 tomato, diced

1 beautiful bouquet of basil

1 tablespoon dried tomato paste

1 can plain white beans

Olive oil

1 glass of white wine (you can drink the rest)

Salt

Cooking time: 20 min
Step 1
In a skillet, heat the oil, sliced garlic, chopped basil and dried tomato paste. Mix well.
Step 2
When the oil is hot, roast the monkfish tails 3 min on each side (they should not be completely cooked).
Step 3
Remove the fish you put aside on a plate, covered to keep it warm.
Step 4
Pour in the diced tomatoes and stir, pour in the drained white beans, add the white wine and salt.
Step 5
Simmer over medium heat 5 min.
Step 6
Add the monkfish tails and cook for another 5 min.
Step 7
Arrange the fish on the plates, reduce the sauce a little with the beans and then spread it on the plates.
Step 8
Decorate with a basil leaf.
