1 eggplant

3 tomatoes

4 slices of raw ham (Serrano type)

125 g mozzarella cheese

12 basil leaves

1 clove of garlic

Olive oil

Guérande salt, pepper




Preparation

Preparation: 30 min
Step 1
Cut the aubergine into slices about ½ cm thick.
Step 2
Heat 3 tablespoons of olive oil in a frying pan over high heat. Add the clove of garlic cut in half, salt and pepper. Fry the eggplants for a few minutes, making sure they are not over-fried.
Step 3
Reduce the heat, add a little water and put a lid on the pan to make them brown.
Step 4
When the aubergines are well preserved (but not in porridge!), remove them from the heat and let them cool.
Step 5
Slice the tomatoes and spread them in a dish. Season with olive oil, Guérande salt, pepper and chopped basil.
Step 6
Cut the mozzarella into slices and place them on top of the tomatoes. Cut the ham into slices and place them on top.
Step 7
Arrange the eggplant slices in a final layer.
Step 8
Put in the refrigerator for about 2 hours and serve chilled.
