150 g flour

30 g Parmesan powder

50 g soft salted butter

7 cl olive oil

50 g basil

1 egg




Preparation

Cooking time: 12 min
Step 1
Preheat the oven to 180°C (thermostat 6).
Step 2
In a bowl, pour in the flour, parmesan and chopped basil and mix well.
Step 3
Add the soft butter and olive oil and mix again but with your hands.
Step 4
Add the egg, mix well and form a ball with the dough.
Step 5
Keep in a cool place for at least 1 hour.
Step 6
Spread the dough (to prevent it from sticking to the work surface, place the dough ball between two sheets of parchment paper and roll it over the top sheet to make it about 2mm thick).
Step 7
If you like very soft shortbread, you can spread the dough a little less finely.
Step 8
With a cookie cutter, cut the shortbread.
Step 9
Then, using a fork, pierce each of them.
Step 10
Bake the shortbread at 180°C for 12 minutes.
Author's note
The shortbread can be browned with egg yolk before baking.
