3 carrots

1 yellow pepper

1 zucchini, not too large

5 tomatoes

2 teaspoons parsley

2 teaspoons basil

1 teaspoon of cumin powder

3 tablespoons of olive oil

Pepper

Salt

Cooking time: 30 min
Step 1
Peel the carrots and cut them into small cubes.
Step 2
Seed the pepper and cut it into small cubes (1 cm/1cm).
Step 3
Peel the zucchini 1cm by 2cm and cut it into cubes.
Step 4
Peel and cut the tomatoes into large cubes (quarters and then three).
Step 5
Heat the oil in a skillet or casserole dish and sauté the vegetables (except tomatoes) over medium heat for about 10 minutes.
Step 6
Add the tomatoes, a small drop of water, parsley, basil, cumin, salt and pepper.
Step 7
Mix gently and simmer covered, stirring occasionally, for about 20 minutes.
Step 8
Taste, adjust the seasoning. The vegetables are soft? so it's ready!
Author's note
You can use this side dish with rice, semolina as a ratatouille, or, for vegetable lovers, alone with white meat. Enjoy your meal!
