1 can cooked and peeled red pepper

1 fresh goat cheese

25 cl of fresh cream

basil leaf

8 slices of sandwich bread

2 cloves of garlic

2 sheets of gelatin

Olive oil

Pepper

Salt

Step 1
This recipe does not require cooking but a few hours in the refrigerator. The charlottes are made easily thanks to small ramekins of 5 cm high.
Step 2
Toast the sandwich bread and rub it with garlic. Cut it into small sticks of 5 cm by 1 cm.
Step 3
Cut the red peppers (cooked and peeled) into discs the diameter of your mussels. You will need 8 (1'lid' and 1'bottom' per charlotte).
Step 4
Prepare the device with fresh cream, goat cheese, chopped basil, salt, pepper, pressed garlic clove and a drizzle of olive oil. Add the gelatine leaves previously moistened in cold water. Stir vigorously.
Step 5
Oil the mussels. At the bottom, place a basil leaf for decoration and a disc of red pepper (which will act as a "lid" once you unmould). Mount the charlottes by lining the sides with small sticks of toasted and garlic bread.
Step 6
Fill with the device and finish with a disc of pepper.
Step 7
Put in the fridge for a few hours and pack well thanks to a plate placed above the small moulds.
Step 8
Unmould, it is very easy if you have oiled the mussels well and if your charlottes are fresh.
Step 9
You can serve on a small bed of salad.
