300 g green asparagus (canned)

2 sheets of gelatin

12 cl white wine

8 slices of smoked salmon

1 tablespoon basil

20 cl of liquid fresh cream

125 g tomato

1 tablespoon olive oil

1 teaspoon shallot

4 teaspoons mayonnaise

Salt

Cooking time: 15 min
Step 1
Cut the asparagus into 3 pieces, set aside the tips and cut the central part into 1/2 cm slices.
Step 2
Soften the gelatin in the cold white wine and then cool it down.
Step 3
Collect 80 g of salmon.
Step 4
Put it in a blender with the asparagus stalks, cream, basil, salt, pepper and white wine + gelatine.
Step 5
Add the asparagus slices to this mousse.
Step 6
Line a cake pan with stretch film.
Step 7
Line the bottom of the pan with smoked salmon, lightly overlapping the slices. Place a layer of 1/2 cm thick foam, renew until exhausted and finish with a layer of smoked salmon.
Step 8
Cover with stretch wrap and refrigerate for 24 hours.
Step 9
Mix the shallots and oil, add the tomatoes and cook for 15 minutes. Mix and let cool before adding the mayonnaise.
Step 10
Serve the terrine as an individual plate, topped with sauce and garnished with asparagus tips.
