Spaghetti with courgettes, garlic and parmesan cheese

Number of people

500 g spaghetti

1 zucchini

2 onions

2 shallots

4 cloves of garlic

Olive oil



1 pinch of cayenne pepper knife


parmesan or pecorino chips, according to your taste

Step 1
Cut the courgette into very thin sticks and set aside, cut the onions and shallots into strips and set aside. Chop the garlic cloves very finely and set aside as well.
Step 2
Using a peeling knife, make strips of parmesan or pecorino.
Step 3
Cook the spaghetti in boiling salted water with a drizzle of olive oil.
Step 4
When the pasta is al-dente, drain it and refresh it slightly.
Step 5
In a wok, heat a little olive oil, add the onions and shallots, melt a little and add the zucchini strips and chopped garlic. Season with salt and pepper and melt the vegetables for 2 to 3 minutes.
Step 6
Add the pasta to the vegetables, adjust the seasoning, add the cayenne, sauté the pasta constantly in the pan and then add the chopped basil.
Step 7
Serve in preheated plates, then sprinkle your preparation with parmesan or pecorino shavings.
