Spring rolls with chicken and curry

Number of people
For the rollers:

Round or rectangular rice sheet

Rice noodles


1 half cucumber

mint leaf

Thai basil leaf



4 tablespoons curry powder

250 g chicken breast



2 tablespoons of oil
For the sauce:

20 cl water (2 small bowls)

20 sugar cubes (+ or - according to taste)

2 cloves of garlic


20 cl vinegar (2 small bowls)

4 tablespoons nuoc mam (fish sauce)

Preparation: 1 hour

For the garnish:

In a pot of boiling water, cook the rice noodles for the time indicated on the package, squeeze them out and rinse them in cold water. Book.
Step 3
Wash salads and Thai basil, mint, cucumber, soya and coriander thoroughly.
Step 4
Remove the leaves from the salad, mint, basil and set aside in bowls.
Step 5
Cut the chicken breast into small pieces, add salt, pepper and curry powder. Mix everything well.
Step 6
Heat the oil in a saucepan and cook the chicken breast in curry and set aside in a bowl.

Cut the cucumber into small sticks.
Step 8
For the assembly of the rollers:

Wet a rice cake in a large bowl of warm water and place it on a clean towel.
Step 10
First put the half-salad leaf, then the soya, one or more mint and basil leaves, one or more coriander branches, one or more cucumber sticks.

(Be careful not to overfill as you may not be able to close the roller or it may crack!)
Step 12
Add the chicken breast to the curry, a little rice noodle and close.

To close the rollers:

First fold down on both sides, left and right, then roll.

For the sauce:

Boil the water and sugar, then let it cool.

Add vinegar, nuoc mam sauce, garlic and chili pepper in very small pieces; then toss.
Step 18
Taste it.
Author's note
Very easy to make but be careful: taste it immediately otherwise the cake will harden! You can put another meat if you wish (curry beef, fried pork cut into small pieces...) or make vegetarian rolls without meat at all. Otherwise, excellent in case of high heat, very light and to eat at will in case of diet!
