1 kg of strawberries

32 cl water

420 g sugar

30 cl lime juice

20 cl orange juice

20 basil leaves

200 g Granny-Smith apple

orange peel

2 tablespoons lemon juice

Step 1
For the sorbet:

Peel and chop the apples, drizzle them with lemon juice.
Step 3
In a saucepan, bring 12 cl of water to a boil, add the apples and cook for 2 minutes then mix. Add the orange zest, 4 basil leaves and 260 g of sugar, then leave to infuse in the fridge for 10 hours.
Step 4
Remove the basil and zest, and add 20 cl of lime juice. Ice cream in an ice cream maker for 1 hour.

For the juice:

In a saucepan, heat 20 cl of water over low heat, add 160 g of sugar, orange juice, remaining basil and remaining lime juice. Stir until it boils and keep in a cool place.
Step 7
Wash and cut the strawberries into pieces. Arrange them in soup plates, pour in the juice and garnish with a ball of apple-lime sorbet.
Step 8
Garnish with basil leaves.
