Summertian spreads with vegetables and goat cheese

4 tomatoes

1 zucchini

1 carrot

1 goat in a stick


Olive oil

Flower of salt

Black pepper from the mill

Preparation: 10 min
Cooking time: 10 min
Step 1
Preheat the oven to 200°, thermostat 6-7.
Step 2
Cut the baguette in the middle, then cut each half into the width to make 4 large slices of bread.
Step 3
Cut the tomatoes into thin slices, the courgette into very thin slices with the skin. Peel the carrot and, using a peeler, cut the slices.
Step 4
Cut the goat cheese into slices.
Step 5
Arrange on each piece of bread: alternately tomato and courgette to obtain a tian, intersperse occasionally a slice of goat cheese. Sprinkle with carrot strips.
Step 6
Add the chopped basil and drizzle with a generous dash of olive oil.
Step 7
Season with salt and a few turns of the pepper mill.
Step 8
Place on a baking sheet and bake for 10 minutes: the crunchy bread, the melted goat cheese and the vegetables still crunch a little!!!!

It's great as an evening meal in the summer and you can make smaller ones for an appetizer or aperitif!
