2 cans of whole tuna (280 g + 140 g)

1 bag of surimi

2 cans of anchovies in oil (75 g)

30 cl of liquid cream

4.5 leaves of edible gelatine

1 tablespoon lemon juice

Basil

Pepper

Salt

Cooking time: 2 min
Step 1
Soak the gelatin leaves in cold water.
Step 2
Drain the tuna, crush it with a fork and 5 spoonfuls of its juice.
Step 3
Cut the anchovies into small pieces, mix them with the tuna and add the surimi.
Step 4
Heat the cream, off the heat, add the dried gelatine leaves. Pour this mixture over the tuna mixture. Add basil, salt and pepper.
Step 5
Pour this preparation into a cake pan covered with stretch film.
Step 6
Put in the refrigerator to firm for 16 to 24 hours.
Author's note
I unmold the dish and place it on a bed of salad with tomatoes, shrimps and hard-boiled eggs. It can be served with homemade mayonnaise.
