1 can of mascarpone (250 g)

3 eggs

1 large bunch of basil

50 g walnuts, shelled

2 tablespoons Parmesan cheese

Olive oil

2 red peppers

12 dried tomatoes in oil

2 fresh tomatoes

10 slices of country bread

Cooking time: 10 min
Step 1
Toast the country bread in the oven.
Step 2
Meanwhile, cut and deseed the peppers, put them in a container, which goes in the microwave oven, with olive oil.
Step 3
Cook, for about 8 to 10 minutes.

Step 5
Meanwhile, prepare the pesto with the basil and nuts. Chop it all up. Add the parmesan cheese and olive oil, so that it becomes a fairly thick cream.

When the peppers are cooked, cut them into small pieces, then add the dried tomatoes, and the fresh tomatoes (also cut into small pieces and seeded).
Step 7
Mix the mascarpone with the egg yolks and beat the egg whites until stiff. Mix it all together gently, then add the pesto.
Step 8
Cut the baked bread into small pieces.
Step 9
In a cake pan, place a layer of bread in the bottom, then a layer of tomato and pepper mixture, and another of pesto-mascarpone.
Step 10
Repeat the operation at least once.
Step 11
Place in a cool place (or prepare the mixture at the last minute, to prevent the bread from softening). However, the different layers must be prepared the day before so that the flavours can develop.

This recipe, specially invented for Father's Day, was a huge success with all the fathers present... and the other guests too!
