1 shortcrust pastry ready to unroll

200 g crumbled plain tofu

50 g grated cheese

3 eggs

20 cl thick or semi-thick fresh cream

2 tablespoons mustard

250 g peeled tomatoes (canned)

Basil

Parsley

Pepper

Salt

Cooking time: 25 min
Step 1
Preheat the oven to 200°C.
Step 2
Spread the dough on a pan.
Step 3
Prick it with a fork.
Step 4
Spread the mustard on top.
Step 5
Add the well drained tomatoes (otherwise they will make too much water), then the tofu.
Step 6
In a bowl, make the 3 egg whites rise to snow and close. Book.
Step 7
In another bowl, mix the 3 egg yolks + cream + herbs / salt and pepper to taste.
Step 8
Stir in the egg whites, mixing gently with a whisk.
Step 9
Pour the mixture over the tofu and tomatoes.
Step 10
Sprinkle with grated cheese.
Step 11
Put in the oven for 25 minutes.

We can replace tofu with tuna for non-vegetarians!
