Tomato and Parmesan Soup

8 ripe tomatoes

2 cloves of garlic

2 onions

100 g grated parmesan cheese

3 sprigs of fresh thyme

1 bay leaf

1 celery stalk

2 spoons of olive oil

1/2 bunch of basil

Pepper

Salt

Cooking time: 25 min
Step 1
Cut the base of the tomatoes, then scald them for 30 seconds. Peel and seed the tomatoes.
Step 2
Mince the onions and crush the garlic. Dice the celery.
Step 3
Heat the oil in a casserole dish, sweat the onions with the celery and garlic. Brown and add the tomatoes, thyme and bay leaves.
Step 4
Stir and sauté for 10 minutes, then cover with water. Bring to a boil, add salt and pepper. Simmer for 10 minutes.
Step 5
Serve the soup sprinkled with parmesan cheese and chopped basil.
