1 kg of tomato

150 g of liquid fresh cream

150 g thick fresh cream

2 tablespoons basil

1 tablespoon olive oil

Garlic croutons

Pepper

Step 1
Peel and seed the tomatoes, cut into petals. Put in the mixer bowl, mix, then add the liquid cream, remix, put the thick cream, remix, add the chopped basil, remix, then add salt and pepper.
Step 2
Mix everything one last time, then taste to adjust the seasoning if necessary.
Step 3
Put in a bowl in the refrigerator for several hours, on ice cubes (if at the last minute, put 1/2 hour to 3/4 hour in the freezer).
Step 4
Just before serving, add 1 dash of olive oil to the soup with the garlic croutons.
Step 5
On the table, add 2 ramekins of croutons.
