Tomato sauce with thyme and basil

Tomato sauce with thyme and basil

Number of jars

4 kg of tomato

400 g onion

4 cloves of garlic

1 bunch of thyme

2 bay leaves

1 bunch of basil

Cooking time: 1 h
Step 1
Cut the skin of the tomatoes and immerse them in boiling water for 30 seconds. Cool them in a bowl of ice water and peel them.
Step 2
Remove the seeds and dice.
Step 3
Mince the onions and garlic. Place the tomatoes, garlic and onions in a casserole dish with the herbs. Season and bring to a boil.
Step 4
Simmer for 1 hour on low heat.
Step 5
Remove the herbs and chop the sauce.
Step 6
Put in pots.
Step 7
Sterilize the jars to ensure proper storage: wrap them in a cloth and place them in a large pot of boiling water. The sterilization time is about 20 minutes but it can vary depending on the capacity of the jars.
