6 tomatoes

1 jar of cod brandade

1 handful of basil

Pepper

Salt

Step 1
Cut a "hat" from each tomato (keep the hats), scoop them out with a spoon, sprinkle them with fine salt inside and turn them over on absorbent paper. While they are draining, reduce the flesh in a saucepan with olive oil.
Step 2
When it starts to pinch, add the brandade and chopped basil and mix vigorously, remove from the heat.
Step 3
Place the tomatoes in an oiled ovenproof dish (they must be tightly wrapped so that they do not burst during cooking). Fill them with the mixture with the brandade while pressing, cover with hats and put them in the oven for 15 minutes.
Step 4
Be careful, let it rest for a while before eating: it's hot in it!
