8 medium round tomatoes

300 g white ham (without rind)

1/2 red pepper

2 onions

4 cloves of garlic

Pepper

Salt

Chives

Basil

Mint (quantities are to be anticipated according to your convenience)

Cooking time: 40 min
Step 1
Chop the herbs (chives, basil and mint) or buy them frozen and ready to use.
Step 2
Cut the hats off at the top of the tomatoes, empty them with a small spoon, taking care not to pierce them, keep the flesh by removing the seeds and juice.
Step 3
Place in a blender the tomato flesh, the chopped white ham, the onions cut in half, the 4 cloves of garlic, salt, pepper, add the herbs and mix finely.
Step 4
Generously fill the tomatoes with this preparation and place them in a mould that has been missing against the edge of the dish, placing the hats at the bottom.
Step 5
Bake in a hot oven for 40 minutes (thermostat 7).
Step 6
20 minutes before serving, replace the hats on the tomatoes.
Author's note
Serve this dish with a green salad.
