1 puff pastry or shortcrust pastry (your choice)

3 eggs

250 g ricotta cheese

60 g Parmesan cheese

100 ml fresh cream

45 g butter

4 tomatoes (or crushed tomatoes)

1 onion

Mozzarella

Olive oil

Basil

Pepper

Salt

Preparation: 15 min
Cooking time: 30 min
Step 1
Preheat the oven to 210°C.
Step 2
Butter a pie pan with butter, put the dough in it and make small holes on it with a fork.
Step 3
Melt the remaining butter and add the minced onion over low heat so that it can brown slightly.
Step 4
Break the eggs in a bowl, add the ricotta cheese, sour cream, parmesan cheese and onion, salt and pepper.
Step 5
Pour the mixture into the pie dish and put it in the oven for 15 minutes.
Step 6
Remove the dish from the oven and place the sliced tomatoes (or tomato crush), grate mozzarella on top and sprinkle with fresh basil (you can also pour a dash of olive oil).
Step 7
Bake for another 10-15 minutes

To be enjoyed with salad (arugula type) for a light meal, it can be enjoyed as a starter
