Number of people

3 eggplants

4 red peppers

4 anchovies

50 g Nice olives

8 cl olive oil





Preparation: 30 min
Cooking time: 1 h
Step 1
Peel and cut the aubergines into thin slices.
Step 2
Brush olive oil over the baking sheet. Put the slices, salt, pepper and a dash of olive oil on top.
Step 3
Bake in the oven for 10 minutes.
Step 4
Bake the peppers in the oven, then put them in a dish covered with cellophane paper and let them rest for 20 minutes.
Step 5
Meanwhile, prepare the sauce: add 4 cl of olive oil, chopped basil leaves, crushed anchovies, garlic, salt, pepper, stir.
Step 6
Peel and cut the peppers into 4.
Step 7
Alternate peppers and eggplant slices in an oven dish (almost vertically). Cook for 30 minutes at 250°C.
Step 8
Add the olives, cook for another 15 minutes.
Step 9
Remove from the oven and pour the sauce over it.
