400 g fresh tagliatelle

150 g fresh salmon

4 slices of smoked salmon

2 courgettes

Olive oil

Basil

Parmesan cheese

Pepper from the mill

Salt

Cooking time: 10 min
Step 1
Cook the pasta in a large volume of boiling salted water.
Step 2
Cut the zucchini into strips and sauté in a little olive oil and water for 5 minutes, then simmer over very low heat until they are well melted.
Step 3
Add the finely chopped salmon and sprinkle with chopped fresh basil.
Step 4
Heat the whole thing for about 5 minutes.
Step 5
Add a little liquid cream or cooking water to the pasta, salt, pepper and cook for about 5 minutes.
Step 6
Sprinkle with parmesan cheese and arrange the plates with a few basil leaves.
Author's note
Avoid grated cheese, it's much better with a little Parmesan cheese. You can also add a little dry white wine.
