1.2 kg of courgette

3 eggs

1 bag of Parmesan cheese

3 teaspoons breadcrumbs

1 large bunch of basil

1 large bunch of parsley

2 cloves of garlic

Pepper

Salt

Cooking time: 35 min
Step 1
Dice the courgettes, keeping the skin on, and fry them in a drizzle of olive oil until they can be crushed with a fork.
Step 2
In a food processor, chop the parsley, garlic and basil, then add them to the courgettes at the end of cooking (do not cook them).
Step 3
Then mix the breadcrumbs, eggs and parmesan cheese with the courgettes.
Step 4
Season with salt, pepper and place in the oven for 35 minutes at thermostat 7 (210°C).
Step 5
Can be eaten warm or cold.
Author's note
Goes very well with Proven├žal baked peppers and grilled meat.
