For the tomato tartar

4 tomatoes

1 scoop of mozzarella cheese

Chopped basil

1 drizzle of olive oil

Garlic powder

6 slices of smoked salmon
For the Parmesan shortbread

100 g Parmesan cheese

100 g butter

100 g flour




Preparation

Preparation: 30 min
Cooking time: 20 min
Step 1
Mix together the parmesan cheese and butter ointment by hand. Add the flour and knead until you obtain a ball of dough. Roll out the dough. Prepare 6 well-spaced circles with a cookie cutter on an ovenproof baking sheet and let stand in the fridge for 30 minutes.
Step 2
Heat your oven to 180°C (thermostat 6) and put the circles in the oven for about 20 minutes (they must be dark but not burnt!). Let cool on a rack.
Step 3
Cut the tomatoes and mozzarella into small cubes, put them in a bowl, sprinkle with olive oil. Add the basil and garlic powder.
Step 4
Just before serving, place the parmesan shortbread on a plate, put a circle on top to make the tomato mozzarella tartar. Add a small slice of smoked salmon on top. You can decorate as you wish: chives, balsamic vinegar velvet...
