5 tomatoes

2 eggplants

1 onion

1 clove of garlic

300 g mozzarella cheese

50 g Parmesan cheese

4 eggs

20 cl of liquid cream

1 can of crushed tomato

Basil

Oregano

Thyme

Olive oil

Pepper

Salt

Cooking time: 1 h
Step 1
Prepare the aubergines by removing the stalk, then cut into slices. Salt and place in a colander for 30 minutes so that they lose their water. Do the same with the tomatoes.
Step 2
In a saucepan, sauté the onion and garlic that you have previously chopped with 1 tablespoon of olive oil, then add the tomato sauce, parmesan cheese and herbs. Book.
Step 3
Preheat the oven to thermostat 6/7 (200°C).
Step 4
Mix the eggs, cream, salt and pepper, add thyme for those who appreciate it. Book.
Step 5
Sauté the aubergines in 1 pan for 10 minutes with 2 tablespoons of olive oil and pat dry.
Step 6
In a gratin dish or -better- in individual ramekins, place your tomato sauce then place a slice of eggplant, tomato and mozzarella in between and so on.... Pour the egg + cream mixture last.
Step 7
Sprinkle with grated gruyère cheese for those who like it and put it in the oven for 40 minutes (watch out).

Very appreciated during a barbecue, as an accompaniment to a grill, or why not as a starter with a nice salad.
