1 shortcrust pastry
500 g of tomato
300 g mozzarella cheese
150 g bacon
3 eggs
3 tablespoons of thick fresh cream
1 tablespoon oregano
1 tablespoon basil
Mustard

Step 1
Preheat the oven to 180°C (thermostat 6).
Step 2
Wash the tomatoes and cut them into slices, salt them and let them drain on a rack.
Step 3
Cut the mozzarella into slices and the bacon into pieces.
Step 4
Spread the dough in a tart pan and coat the bottom of the tart with mustard.
Step 5
Cover alternately with a slice of tomato and a slice of mozzarella, then "sprinkle" with bacon.
Step 6
Mix the crème fraîche with the eggs, a tablespoon of mustard, salt, pepper, oregano and basil and pour the mixture over the preparation.
