Basil tomato cake

Basil tomato cake

Number of people

150 g flour

3 eggs

1 sachet of yeast

4 tablespoons of olive oil

4 tomatoes

1 bunch of fresh basil

15 cl milk

100 g grated county cheese

Cooking time: 45 min
Step 1
Peel, seed and dice the tomatoes.
Step 2
In a frying pan, heat 1 tablespoon of olive oil. Sauté the salted and peppered tomatoes for 3 minutes and add the stripped basil at the end of cooking. Reserve.
Step 3
Preheat your oven to 180°C (thermostat 6).
Step 4
In a bowl, beat the eggs and add the yeast and flour.
Step 5
Once the mixture is well homogeneous, add the remaining olive oil and mix well.
Step 6
Let the milk cool and add it gently to the mixture.
Step 7
Pour in the tomato mixture, cheese, adjust the seasoning.
Step 8
Pour everything into an unbuttered cake pan and put it in the oven for 45 minutes.
Author's note
Can be eaten as a dish with a mixed salad, as a starter or even as an aperitif. Cold or warm. Ideal for a picnic!
