Olive oil

2 onions

1 eggplant

2 courgettes

1 pepper (yellow if possible for colour!)

1 can of peeled tomatoes (cheaper and more effective than fresh tomatoes, it gives you juice!)

Herbs of Provence

Fresh basil (10 leaves) if possible, otherwise dried basil

2 bags of mozzarella cheese

4 slices of country ham

Preparation: 30 min
Cooking time: 1 h
Step 1
1) Cut the onions into small pieces.
Step 2
2) Put a drizzle of olive oil in a pot and sauté the onions.
Step 3
3) Cut the aubergine and courgettes into slices and add them; cover the pot and leave for 5 minutes, taking care that it does not stick.
Step 4
4) Add the pepper cut into strips, peeled tomatoes and herbes de Provence; season with salt and pepper.
Step 5
5) Simmer for about 45 minutes over low heat.
Step 6
6) Put the ratatouille in a gratin dish.
Step 7
7) Cover with thinly sliced mozzarella cheese and season with pepper.
Step 8
8) Cook for 15 minutes.
Step 9
9) Before serving, cover slices of country ham cut into pieces and basil leaves.
