Eggplant cigars with mozzarella

Eggplant cigars with mozzarella

Number of people

8 slices of grilled eggplant

4 teaspoons fresh basil, minced

Extra virgin olive oil

4 teaspoons of tapenade

Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Brush 8 sheets of brick with olive oil on one side, then turn them over.
Step 3
Set aside 4 sheets.
Step 4
On one half of each other leaf, place 2 slices of grilled eggplant side by side.
Step 5
Spread 1 teaspoon of tapenade on top, then 25 g of mozzarella cheese in strips.
Step 6
Sprinkle with 1 tablespoon basil, pepper generously, then fold down the top leaf; and roll like a big cigar.
Step 7
Place each sheet on a sheet, then roll again. Repeat the operation to form 3 more rolls.
Step 8
Bake on oiled aluminium foil for 12 to 15 minutes.
