1.5 kg of floury potatoes

300 g flour

1 egg

400 g of tomato

2 cloves of garlic

2 tablespoons chopped fresh basil

50 g butter

2 tablespoons of oil

Pepper

Salt




Preparation

Cooking time: 20 min
Step 1
Peel the potatoes and cook them in salted water or steam.
Step 2
Once cooked, drain and mash into a fine purée.
Step 3
Add the beaten egg and then flour (quantity to be measured to the texture) little by little in order to obtain a soft but firm dough.
Step 4
On a floured surface, form puddings and cut them into small pieces (3-4 cm).
Step 5
Flatten them slightly by pressing them with a fork to make the streaks, set aside in a floured cloth until it is time to cook them.
Step 6
Peel and seed the tomatoes.

Crush them with crushed garlic, oil, salt, pepper and chopped basil.

Cook the gnocchi in boiling salted water: remove them when they rise to the surface.

Drain and fry them in a frying pan with butter.

Mix with the cold tomato coulis and serve immediately.

Add parmesan cheese or mozzarella pieces to taste.
