Linguine 200 gr (about

Salted butter, 30 gr

fresh green shallot, 2 units

Fresh basil 125 g

Dry white wine 6 c

Cream 35%, 10 cl

Fresh yellow pepper, 80 gr

Fresh green pepper, 80 gr

Fresh red pepper, 80 gr

Dried tomato 125 g

Fine (regular) salt, 7 gr

Ground white pepper

Cooking time: 20 min
Step 1
Cook the linguines in plenty of water.
Step 2
In a skillet, lightly sweat the green shallots.
Step 3
Wet with white wine.
Step 4
Allow to reduce to half.
Step 5
Add the cream and reduce a little for 2 to 3 minutes over medium heat.
Step 6
Season with pepper and salt
Step 7
Sauté the peppers (cut into julienne strips) with the chopped dried tomatoes and basil in another skillet.
Step 8
Add the cooked pasta. Mix well with peppers, dried tomatoes and basil.
Step 9
Pour the sauce on sauce over this mixture.
Author's note
** If you use dry white cooking wine that is already salty at the base, be careful with the salt that you add as a seasoning. This dish is perfect for summer with all the colours together.
